Cinnamon Sugar Quick Bread Recipe
This quick bread is loaded with cinnamon sugar goodness. It's like a coffee cake in loaf form and is great for breakfast or a simple snack.

light brown sugar

granulated sugar

ground cinnamon
divided

all purpose flour

baking powder
½
teaspoon
salt

egg
1

milk
1
teaspoon
vanilla extract
⅓
cup
vegetable oil
or other neutral flavored oil
Instructions
Preheat oven to 350°F and grease a 9x5x3-inch loaf pan.
In a small bowl, stir together brown sugar and 2 teaspoons cinnamon.
In a medium bowl, stir together granulated sugar, flour, baking powder, salt and remaining teaspoon of cinnamon.
In a larger bowl, mix together egg, milk, vanilla and oil.
Add the flour mixture to the milk mixture and stir until just combined.
Spread half of the batter on the bottom of the greased loaf pan. Sprinkle half of the cinnamon sugar mixture over the top.
Add dollops of remaining batter to cover the cinnamon sugar, than top with remaining cinnamon sugar.
Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the loaf pan for 10 minutes, then turn out onto a wire rack to cool completely.
Slice and serve at room temperature or slightly warmed in the microwave.
