Microwave the cinnamon chips for 25 seconds and stir until melted. Heat them again in short intervals if necessary until it is smooth. Add the coconut oil and stir well.
Pour the melted cinnamon chips over the crispy rice cereal and stir until well coated.
Spoon this mixture onto a baking sheet that has been lined with waxed paper and spread into a thin layer. Refrigerate until your ice cream is done churning.
Ice Cream
To make the ice cream blend together the milk, salt, honey, brown sugar, and vanilla. Stir until honey and brown sugar are dissolved.
Stir in the cream and cinnamon.
Pour into the bowl of your ice cream maker and churn according to your manufacturers directions
Break the crunchies into small pieces and stir into the ice cream.
Put into a freezer safe container with a cover and freeze until firm.
