Salmon Potato Cakes

Salmon potato cakes are quick and easy to make and inexpensive too. They are a perfect nutritious meal that is great for Lent or anytime you need something fast and simple. Make them as an entree or make them smaller for an appetizer.

Ingredients

Canned Salmon  Potato  Lemon Juice  Eggs  Green Onion  Salt and Pepper  Oil 

Cook the potato or use leftover baked potatoes. Scoop out the inside.

Mix in the salmon, eggs, lemon juice, and seasonings.

Form into patties and pan fry in a couple of tablespoons of oil.
