Homemade Rhubarb Cobbler

Rhubarb cobbler is one of my husband’s favorite desserts. A layer of rhubarb is covered in a sweet buttery crust that is a cross between a biscuit and a cookie, for the perfect sweet and tart treat.


Rhubarb  Sugar  Flour  Baking Powder  Butter  Egg 

Preheat oven to 350F. Place chopped rhubarb and some of the sugar in a greased 8-inch square pan.

Mix together dry ingredients and cut in the butter until crumbly.

Stir in the egg.

Dollop dough over rhubarb.

Bake until the rhubarb juices are bubbly and the topping is golden brown.

Serve warm. It's good on its own and even better with whipped cream or ice cream.
