Breakfast enchiladas are a hearty way to start your day, and they are a great breakfast for dinner option as well. The mix of the sausage and eggs with the cheese sauce makes for a tasty combination.

Brown the sausage and scramble the eggs. Scoop the filling into tortillas and place seem side down in greased pan.
Melt the butter. Stir in the flour and cook for a minute or two.
Add the milk and cook until thickened. Melt in the cheese and add the chilies.
Pour sauce over the enchiladas.
Bake until bubbly and lightly golden brown.
Add your favorite toppings and garnishes. Enjoy!
