Ham Egg and Cheese Breakfast Hand Pies

Hand pies stuffed with ham, eggs and cheese are a fun and easy breakfast or brunch main course.  They come together quickly and the filling can be easily changed to match your tastes.

INGREDIENTS:

Ham or canadian bacon Eggs Sour cream Salt Black pepper Cheddar Puff pastry Scallions

STEP 1

Preheat oven to 425°F.

In a medium skillet cook ham over medium  heat until it is fragrant and lightly browned.

STEP 2

Whisk together 3 eggs plus one egg white and sour cream. Reserve the extra egg yolk for later.

STEP 3

Pour eggs into skillet with ham and season with salt and pepper.  Cook until just barely set and remove from heat.

STEP 5

Cut cold puff pastry into 6 squares and place on parchment lined baking sheet.  Top with 1/6 of the egg and ham mixture and a couple of teaspoons of cheese.
