Carrot Pie with Crumb Topping
This carrot pie is topped with a buttery cinnamon streusel. It is a fabulous combination that will make you wonder where carrot pie has been your whole life. It’s perfect for Easter, Thanksgiving or just because.
Pie Crust Carrots Butter Sugar Brown Sugar Eggs Milk Cinnamon Ginger Flour
Clean, peel, and chop carrots. Boil in a little bit of water until tender.
Add butter and process until smooth.
Mix in eggs, milk, sugars, and seasonings. Pour into crust and bake about half way through.
Top with brown sugar, cinnamon, flour, and butter crumb mixture. Finish baking and cool.
Enjoy on its own, or topped with whipped cream or ice cream.
