Bright, sweet and full of flavor and texture, this pie is the perfect combination of coconut and pineapple for a taste of the tropics in pie form!

       I have been testing recipes and narrowing down the field to get ready for the upcoming pi{e} day event.  I still haven’t perfected the art of a pretty pie, but tasty pies I can do all day long! I have been looking for a little something different and this one was a strong contender!

        I ended up giving another pie the honors, but this one is definitely worthy as well!  I am a pineapple lover and have been wanting to try pineapple in a pie for a while now. 

Add that to the fact that I WAAAAAAY overbought coconut during the holiday baking season and this pie was born.

     It actually makes perfect sense to put them together.  Both are classic tropical flavors.  Pineapple is so sweet but with that bright fruity flavor.

Then there is the sweet, slightly nutty coconut. Both the poster children of tropical food.

    I found a pie that paired the two in a way that seemed interesting in Dining With Debbie’s PCP pie.  I knew I would have to change it up a bit though because we all know by now my husband won’t touch anything with nuts in it. 

I could imagine they offered a nice foil to the sweet though. So maybe some day!

    So I went to work making some tweaks.  So I upped the coconut quite a bit. 

Without the pecans and with the extra sweetened coconut, the sugar needed dialed back a bit.  The results were delicious!

     I think the mix of textures is one of my favorite parts.  The top had a bit of crackle, almost like a crème brulee crunch. 

The coconut lent a nice chew.  That all gives way to a smooth, custardy base. 

It is an unexpected mix of goodness coming together to make something unforgettable.

     So get your sweet tooth ready, this pie is coming to town and you just have to give it a try!  If you are looking for a few more great pie recipes, grandma’s oatmeal pie is another great pie that is full of coconut but in a nuttier tasting oatmeal filling.

Or Jan’s almost apple pie is always a fun one.  It tastes just like apple pie, but is really made with zucchini!

Taste of the Tropics Pie {with Coconut and Pineapple!}

Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 1 recipe pie crust dough
  • 1 1/2 cups sugar
  • 1 Tablespoon cornmeal
  • 1 Tablespoon flour
  • 5 eggs
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 2 1/2 cups flaked coconut
  • 1/4 cup butter, melted

Instructions

  1. Preheat oven to 325° F and prepare pie plate and pie crust.
  2. Beat together sugar, corn meal, flour, eggs and salt until smooth and well combined.
  3. Stir in drained pineapple, coconut and melted butter.
  4. Pour filling into crust and bake for 50-60 minutes or until just set and a bit golden on top.
  5. Cool completely before serving.
  6. Store in the refrigerator but allow to sit at room temperature for a bit before serving if possible.
