Hard squash are a perfect way to extend the harvest for weeks and months past the first frost. They are delicious and versatile vegetables that can be made into everything from soups to desserts. Here are some of our favorite recipes using butternut, acorn, delicata squash and more.
There are so many delicious varieties of winter squash. We are very lucky that our CSA loads us up with the good stuff towards the end of the season.

I have a pile of butternut squash, acorn squash, delicata squash and a few spaghetti squash on the buffet. Luckily they store well and I love them all.
If you found yourself with a similar stash, you are in luck! I have collected some of our favorite squash recipes to share with you.
The best part is most of these recipes can be used for any type of winter squash. Just because the recipe calls for acorn squash doesn’t mean you can’t use butternut and vice versa.
So if you don’t have a pile of squash, head to the market straight away. We have some cooking to do!

We do love squash at our house. It seems like it doesn't stay on long enough. Of course I can buy it, but I really do love getting it out of my garden!
