Creamy custard topped with fruit is always a hit.  Turn them into minions for extra fun! These are perfect for movie watching or a fun treat. What’s not to love about a cute sweet treat?  They are perfect for your favorite child or child at heart!

The little guy in our house is OBSESSED with minions.  I mean really obsessed.  It all started with a YouTube video of them singing the banana song.

It was the first thing that was on the television that caught his attention.  He is the only grandchild on my side of the family and I am one of six kids. So he is the center of attention when we all get together and he normally gets what he wants.

So there was a stretch of time where we saw that video a lot.  He didn’t know what they were called, just that they kept saying “ba-ba-ba-ba-ba-na-na.”

So he started calling them ba-bas. We all followed suit.

The love of the video inspired MiMi and Aunt Toe-Toe to buy him a ba-ba shirt. Then there was the ba-ba baseball cap.

The ba-ba cup, the other ba-ba cup and the third ba-ba cup.  There were the little toys and the spinning ba-ba that made a lot of noise and lit up (that one was thanks to his daddy.) Oh and we can’t forget the ba-ba shoes.

He even dressed up as a minion for Halloween this year.  MiMi knit him the cutest little stocking cap and he wore a yellow shirt and overalls.  He was pretty darn cute if I do say so myself!

My husband had to work a lot last weekend and there was rain and snow in the forecast, so it was perfect timing for the little guy and I to have a movie date.  I was looking forward to snuggling up under a blanket on the couch and seeing the whole story of those little minions with one of their biggest fans.

A movie date requires snacks and this was too big of a deal for just regular snacks.  This required something special!

Of course we popped a little popcorn.  Little Dude loves to watch it pop and we both love snacking on it.

Little Dude inherited his sweet tooth from me, so we needed a sweet treat as well.  I wanted to surprise him with something extra fun.  A baked custard seemed like the perfect choice.

The smooth creamy texture is perfect for kids and adults alike.  I got to indulge a little bit and he got to have a sweet treat that I didn’t have to feel bad giving him.

To dress them up for our Minions date was easy enough.  I strategically placed a few thick slices of banana with the peel still on for goggles.

Every minion needs his goggles after all.  A couple of blueberries for eyes, melted chocolate  for goggle straps and smiles and we were ready to go!

All we had to do was pop in the movie and snuggle in!

Minions Baked Custard

prep time: 15 MINScook time: 35 MINStotal time: 50 mins

ingredients:

  • 2 T sugar
  • 2 egg yolks
  • 1 egg
  • 1/2 cup cream
  • 1/2 cup half and half
  • 1/4 tsp vanilla extract
  • For garnish: banana, blueberries, 1/4 cup chocolate chips, 1/2 tsp coconut oil.

instructions

  1. Preheat oven to 325 F. Butter two custard dishes, get a small pot of water warming over medium heat on the stove and get a 9 x 13 out and ready.
  2. In a heavy bottomed saucepan, begin the heat the half and half and cream over medium-low heat.
  3. Meanwhile in a large bowl, mix together the yolks, egg, sugar and vanilla.
  4. As soon as the cream mix starts to steam (you don’t want for it to boil) remove it from the heat.  Very slowly drizzle it into the yolk mixture, vigorously whisking as you go.  You don’t want the mixture to turn to scrambled eggs, so make sure you pour very slowly.
  5. Pour custard mixture into prepared custard dishes.  Place dishes in the 9×13 pan. Pour hot water in the 9×13 around the custard dishes.
  6. Put the whole set-up into the oven and bake for about 30-35 minutes or until set.
  7. Remove ramekins from hot water and cool to room temperature.  Then wrap with plastic wrap and place in the refrigerator for at least few hours.
  8. When ready to serve, carefully melt chocolate chips in the microwave.  Once smooth, stir in coconut oil.  Spoon into a plastic baggie.
  9. Cut a few thick slices of a banana that still has its skin on.  Place at goggle level on the custards.
  10. Cut a small corner off of the baggie with chocolate in it, use the chocolate to pipe on a smile and goggle straps.
  11. Place a blueberry on each banana slice for the eyes and you are ready to go!
