Cheesy Potato Casserole with French Onion Dip

 If you love a good creamy cheesy potato casserole, you have to try this recipe’s tasty twist. Using French onion dip in place of the sour cream adds another layer of flavor to this already tasty side dish.

Cheesy potato casserole is always a hit. It’s one of those side dishes that goes with everything and the whole family is happy to see it on the dinner table.

This recipe has a small twist that makes it extra tasty. Sometimes it’s that one secret ingredient that makes all of the difference! 

 What do you call this dish? You know the one that has cheese and hash browns topped with buttery cornflake crumbs.

My family has always called it cheesy potato casserole. However the name funeral potatoes seems to be popular on the internet.

No matter what you call it, the dish is popular for a reason. It is creamy, cheesy, warm and fabulous. 

We tend to save it for holidays and special occasions, but it feels like it could go with almost any entrée. Everyone’s eyes get bigger and tummies get fuller when it’s on the menu.

I found a fun recipe for something similar over on South Your Mouth. She has a recipe for hashbrown casserole that uses French onion dip instead of sour cream.

The rest of the recipe is quite different than our version of cheesy potatoes. So I thought it would be fun to try her twist on our recipe. 

Of course it was amazing. All of that added flavor from the dip adds great depth to the final dish.

Sometimes it is a small change like this that makes all of the difference. It’s not a smack in the face, just a subtle something different that perks you up. 

More easy ways to switch up your cheesy potatoes

You could very easily make another simple change and use ranch dip instead of the French onion. Then you’d have cheesy ranch potatoes and I am sure that will be a hit as well.

Another easy way to change it up is to change the style of hash browns.  I like it with the southern style little cubes of potatoes.

You can also use the shredded potatoes.  Or change it up even more and use the O’Brien potatoes with bits of pepper and onion in it.

Why are they called funeral potatoes?

In some parts of the country, this cheesy potatoes are known as funeral potatoes. That is because this comforting casserole is often served as a side dish at after funeral luncheons. In our region, they are popular at holiday meals and large gatherings of all types.

Ingredients
 

  • 6 Tablespoons butter divided
  • 1 medium onion diced
  • 1 teaspoon garlic powder
  • 10.5 oz can cream of chicken soup
  • 12 oz French onion dip or sour cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 28-32 oz bag frozen hashbrowns
  • 2 cups shredded sharp cheddar cheese
  • cups crushed cornflakes

Instructions
 

  • Preheat oven to 350°F and grease a 9×13-inch pan.
  • Melt 2 Tablespoons of butter in a skillet. Add diced onion and cook gently over medium-low heat until the are translucent and soft.

  • Put the onions in a large bowl. Add garlic, soup, dip (or sour cream), salt, pepper, 1½ cups of cheddar and stir together. 
    1 teaspoon garlic powder, 10.5 oz can cream of chicken soup, 12 oz French onion dip, ½ teaspoon salt, ¼ teaspoon black pepper
  • Gently stir in the potatoes, then spread in prepared pan. Sprinkle remaining cheese over the top.
    28-32 oz bag frozen hashbrowns
  • Melt the remaining 4 Tablespoons of butter. Toss the cornflake crumbs in the butter then spread over the top of the casserole. 
    1½ cups crushed cornflakes
  • Bake for 50-60  minutes or until the potatoes are soft and the cheesy is bubbly.  Rest for 5 minutes before serving.
